Agar Kanten or is derived from a mixture of seaweed, available in powder. Gelling capacity depends on the acidity: acid preparations will need a little more on agar. Do not combine with chocolate, or the kiwi, as they neutralize the effect gelling.
Employment: For jam: 4g Agar-Agar Powder 1kg fruit 1l cleaned or fruit juice. Bring fruit and agar to a boil, then add the sweetener of your choice. Reduce until desired consistency.
As part of a diet, agar-agar does three calories per gram, it tempers the appetite and captures fats and sugars. It allows you to easily cook fruits and vegetables, essential to health, especially during a diet. It gives consistency to any preparation and can take various forms: mousse, flan, etc. terrine.
